Cola Notes
Future Ideas
- double the coke reciepe flaovur ratio (halve water/sugar?)
- assumed they meant 11 g of 75%5 phosphoric, I suspet they didn't likely meant 11 g of 100% phosphoric, doctor up existing syrup with more?
- replace lime juice with lime oil, and up the phosphoric amount to the what open cola calls for
Equip needs
- more accurate scale for weight 10 grams
- Coca leaves
- Caffeine?

- 1.00 ml lemon oil
- 1.00 ml nutmeg oil

- 4 lb plain granulated white table sugar (Brand: Pensiular)
- 30 ml green food coloring
Making Notes
- Emulsion formed by doing,
- stick blending with blade attachemnt 20ml of water and acacia gum for 10 minutes
- let it sit for 2 night
- using wire whip attachemnt to stick blender slowly (using syringe) drip oil into mix, process took about 30 minutes (stick blender was overheating by the end
- Need to try Drill and thicker wire whip to speed process up (might need glass beaker too)
- syrup was formed by taking the 7x formula blaneding with 100 mls of water then mixing with rest of the water
Tasting Notes
- Color disturbingly thick
- Somewhat chemically taste
- Leaves odd aftertaste, perhaps headache ish. (Too much of the 7x formula?)
- sticky mouth feel
- 'Pressure' on sides of tongue
- Still a little too sweet (tastes kinda fake ish)
Expirement #3 (4/10/2006)
Recipe (based on opencola)
Syrup (made half of what opencola calls for)
- 0.75 tsp. 7X formula (From Expirement #2)
- 1.75 tsp. citric acid
- 1.1 l water
- 3.5 lb plain granulated white table sugar (Brand: Pensiular)
- 2 ml green food coloring
Making Notes
- Half-gallon mason jar good for making/storing the syrup in
Tasting Notes
- Color much better
- Dilution ratio of 1:4ish works better in final step
- Still has a slight odd aftertaste
- Smells flowery still (Dump that lavender or neroli?)
- Considered fairly successful
Expirement #4 (4/10/2006)
Recipe (based on opencola)
Syrup (made half of what opencola calls for)
- 0.75 tsp. 7X formula (From Expirement #2)
- 1.75 tsp. citric acid
- 1.1 l water
- 3.5 lb plain turbinado sugar (Brand: Pensiular)
- 1 ml green food coloring
Making Notes
- realized that have decresed everything but water by now and am diluting alot less, likely need to reset the sugar/formula amoutns back to orginal and dilute with carbonated water more
- Had some trouble in the dilution phase keeping good carbonation, not sure if something up with the sugar otr the carbonated water (have switched to much cheaper Meijer brand carbonated water...)
Tasting Notes
- Still has a slight odd aftertaste
- Smells flowery still (Dump that lavender or neroli?)
- Considered fairly successful
Expirement #5 (5/2/2006)
Recipe (based on Recipe 3)
Ingredients:
- 2.4 kg Sugar, dissolved in the minimum of water(1.5 qt) (2.2kg white granulated, .2kg turbinado)
- 9.7g of 85% Phosphoric Acid
- 0.37 g Kola Nuts (in 22g 20% alcohol solution made of 5.82g everclear and 16.2g water)
- 30 g Lime Juice
- 19 g Glycerine (vegetarian)
- 1.5 g Vanilla Extract
- 0.88 g (1.032 ml) Lemon Oil
- 0.47 g (0.557 ml) Orange Oil
- 0.20 g (0.190 ml) Cassia Oil
- 0.07 g (0.077 ml) Nutmeg Oil
- Trace (0.05 ml) Lavender Oil
- Trace (0.05 ml) Neroli Oil
- Trace (0.05 ml) Coriander Oil
4.9 g 95% Alcohol unable to aquire, used 75.5% everclear instead,used 6.16 g of the 75.5%
2.7 g (2.7 ml) 1.2 g (1.2 ml) Water (1.5g was already premixed with alcohol)
Making Notes
- It says 'shake', did so by hand for 5 minutes
- Neither layer was particularly cloudy, but guessed that they meant the bottom layer (as we want the part that has dissolved in water
- Need to find a source of 95% alcohol
- Soaked cola nuts for 24 hours
Tasting Notes
- cola taste considered weak, mainly taste sweet not quite sure why thinking need to halved the sugar final volume, and dilute up until we like it.
- desired acidic bite seems missing,
- Chemically flaovour no longer there, unable to ascertein which changed variable is the cause
